At least four restaurants have graced the space next to the Hotel Orrington where Blu Sushi Bar and Lounge now resides. With its impressive interior and inventive offerings, Blu hopes to change the luck of the location, while carving out a new era of Evanston nightlife in the process.

The sandalwood, white and red main dining room looks similar at first to other sushi-serving spots in the North Shore, but the space’s curvaceous booths begin to set Blu apart from its peers. Each carries about six to eight late-night hotel guests or local residents cradling ginger martinis or noshing on slices of pear pistachio cake. Even more distinctive is the second-floor lounge, with its sleek leather couches and Ikea-like tables.

Former Moda chef Sang Lee puts his spin on standard sashimi at the sushi bar, with creations like the White and Black Dragon Rolls, served with super white tuna or unagi and scallops, respectively. Rolls range from about $11-$17 each. The menu also includes hot options, like the braised short ribs or chicken teriyaki over seasoned rice, for those too timid to try the raw stuff.

Like any true sushi bar, Blu offers an inviting list of 30 sakes to explore, including bottles of Hakushika ($12) and Moriko Daiginjoi ($72).
